Chef Eric Samson invites you on an engaging journey in harmony with his origins in Brittany (the iodised, salty sea – abalone and sea urchins in particular) and the high-altitude Savoie Alps. Not forgetting Périgord, where the chef grows his own truffles. Three striking and complementary natural territories, which interact and confront each other in the course of his creations.
Among the chef’s new dishes, delicate Arctic char combines with tangy purslane and iodised caviar. Discover the finesse of matured abalone from the Brittany coast or the organic egg in homage to Périgord truffles.
Eric Samson and his pastry chef also create wonderful desserts, both light and intense. Not to mention a superb wine list, in keeping with the culinary theme.
